Summer Pasta Salad
I love to be able to make a quick pasta salad with what I’ve got on hand in my pantry. This recipe isn’t just a “preparedness pantry” recipe, it’s one that I actually crave on a hot summer day. I hope you enjoy it too.
- 12 oz. of spiral pasta, cooked and drained according to package directions.
- ¼ cup of coconut oil
- ¼ cup of red wine vinegar
- 3 T. of Shirley J Pizza Pasta Seasoning
- ½ cup of reconstituted dehydrated red and green bell peppers
- 1/3 cup of reconstituted dehydrated sliced celery
- ½ cup of reconstituted dehydrated sliced carrots (I like The Wheat Lady brand for this)
- 15 slices of pepperoni and/or salami
- 1/3 cup of Parmesan cheese
Combine all of the ingredients except the pasta and the cheese in a large salad bowl. Gently toss in the cooked/drained pasta. Let sit about 15-20 minutes to absorb the flavors. Top with the Parmesan cheese.

I have recipe that is similar though I use “Italian dressing” instead of the dehydrated vegies, vinegar and oil. Same concept, what’s great is the salad gets better tasting in the fridge. Lasts at least up to 4 days I have never had a big batch last longer than that. I like dry salami for the meat.
I’m looking to do a trinity(vegies) as a soup starter mix. I’d ask about the French, Onion, carrot, celery and garlic except I can’t spell it. 🙂 as a dehydrated mix. Those hard cheese are great for waxing!
Just a little tweak of the recipe. I do that all the time.

This sounds great! Are pepporoni and salami shelf stable or do you bottle the meat?

There are whole lot of pepperonis and salamis that are shelf-stable. Basically, if you purchase it in a refrigerated section, it needs to be refrigerated. But if you buy it on the shelf with plastic sealing, then it’s shelf stable for several years.

Oh that is great info on the meats. I’d like to do a take on German potato salad but add in a “Summer Sausage” as a meat. I think that would be good hot or cold.

Mmmmm. That looks really good. I didn’t realize that the plastic wrapped meats were shelf stable for several years. That is a fabulous hint. Thank you. I will be grabbing some next time I am out shopping.

My coconut oil is solid like shortening. Can you buy it as a liquid. Where?

yes, it depends on the brand. Personally, I prefer to have my coconut oil be like shortening–it’s better for everything that I use it in such as pie crusts, baked goods, deep frying, etc.

Would you consider the Shirley J Pizza Pasta Seasoning to taste similar to the McCormicks Salad Supreme? (If you have tasted that..) I LOVE that stuff, and if I can get a huge container for only 2x the cost of the little seasoning bottle, I just might be doing a happy dance right now!!

oh, no. Not by a long shot IMO. Remember, Shirley J was food products for 4 and 5 star restaurants and then started offering their products to the general consumer populace. Their stuff is mountains above just about anything out there other than homemade from scratch by an awesome chef. 🙂
