Mississippi Mud Pudding Cake
A brownie-like cake meets molten chocolate pudding—because sometimes, life is better when things get a little messy! Mom would make this for us kids as a special treat on family night. It’s delicious. I recommend adding in 3/4-1 cup of chopped walnuts.
Ingredients
For the Cake Batter:
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup whole milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
For the Pudding Layer:
- ¾ cup packed brown sugar
- ¼ cup unsweetened cocoa powder
- 1 ¾ cups hot water (just off the boil)
Instructions
Step 1: Prepare the Cake Batter
- Preheat your oven to 350°F (175°C). Grease a 9-inch square baking dish (or similar).
- In a medium bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt.
- Stir in the milk, melted butter, and vanilla until just combined. The batter will be thick—like brownie batter.
- Spread the batter evenly into the prepared baking dish.
Step 2: Add the Pudding Magic
- In a small bowl, mix the brown sugar and cocoa powder. Sprinkle this mixture evenly over the top of the batter.
- Now, for the fun part—slowly pour the hot water over the entire dish. Do NOT stir! The water will look like it’s just sitting on top, but trust the process—baking alchemy is about to happen.
Step 3: Bake & Serve
