Recipe Friday: Cake Mix Cookies

 

This is an incredibly easy recipe that uses cake mixes as the foundation for the cookie and creates a very simple cookie when following the directions, but I love it when I approach it from the perspective of it being a blank canvas. I can then do all kinds of yummy things with it. For example, you could put dark chocolate shavings in a German Chocolate cake mix and a little bit of almond extract to make an out of this world chocolate cookie. Or use a lemon cake mix and put craisins in the batter or fresh lemon zest. I love surprising folks by using the strawberry cake mix with pieces of freeze-dried strawberries and then I create a strawberry glaze to go over the top of the cookies using confectioners sugar, milk, and a little bit of strawberry puree. Bottom line it’s got tons of possibilities and cake mixes are something that I am always getting dirt cheap with coupons. In fact, I get the cake mixes for less than the actual cookie mixes and the cake mix makes a heck of a lot more cookies than those bland cookie mixes do. Enjoy!

CAKE MIX COOKIES: 

Mix 1 box of cake mix with 2 eggs and ½ cup of vegetable oil. (Coconut oil always tastes divine in this recipe). Stir by hand until all the lumps are gone. Then add ½ to 1/3 cup of your desired “special ingredients”. This step is optional.

 

Drop by the teaspoon on a cookie sheet using parchment paper on top, not an oil of any kind.

 

Bake at 350 degrees F for 8 to 10 minutes. Cool for 5 minutes on the cookie sheet and then 10 minutes on a cooling rack.

I am wondering about what coconut oil to get also. I used to see it on the Five Star website some time ago, but I don't see it there anymore.

I'd do some searching on Amazon. Make sure you get cold-expressed coconut oil.

I have tried the cookies out of cake mix and they are great. But I never thought of some of the ideas you had especially the coconut milk. Will def have to try thanks

A few of my favorites include: spice cake mix with added pumpkin; lemon cake mix; cherry chip; and of course, chocolate with chocolate chips!

Can you tell me how much pumpkin and the recipe with the spice cake cookie direction and ingrediants thanks so much ..

Thanks for the recipes, Kellene! I have a variation called "Friendship Cookies" made with 1 box of chocolate cake mix, 1 egg, 1/2 cup oil, 1/4 cup water and 1 cup white chocolate chips. The instructions are the same as your recipe. I think some macadamia nuts would be great too. My husband, the Cookie Monster, loves them. Enjoy!

Have been making cookies this way for years and everyone loves them. Just remember, that if you live in a high altitude area, to add 2TBS of flour to your mix. **most cake boxes will let you know what to do for high altitude cooking** Will have to try the coconut oil..especially with the german chocolate cake mix. Will have to try adding pumpkin with my ginger bread mix!

Years ago I could find orange cake mixes. I used to make cookies with an orange cake mix and semi-sweet chocolate chips. Yummy!

Kellene, could you come up with some recipes for people who have to watch their sugar intake. I love recipes but most of them have way to much (white) in them. I grind my own flour and everything that I bake has fresh ground flax in it also. Any recipe ideas???

We made these the other day and then again the next day. My grandaughters loved that they could make them since they were so simple. Even Jazmin who is handicapped could make a batch. We put chopped apricots and walnuts into a pecan cake mix and it was totally AWESOME. In the lemon I added extra lemon juice and rolled them into powdered sugar which made a crackle.The bad thing about them , is they don't last very long. Love it.
